These 2 color techniques require more editing than others. For grid you have to either double photos, change color of phone image, or use of bunch of different photos in one. This is complicated when you first start, but you get the hang of it. Mood can sometimes be based off of interpretation. How much coloring or darkness/lightness needed to give a photo moos is really what the photographer thinks. For me, I don't like to add much edit. I like to find a photo that already gives off a certain type of mood and then just accentuate it in Lightroom.
